Quick summary.
All the tracks are designed so lifting the throttle or braking are not required, don't worry, this does not indicate some simplistic driving model, far from it. To lap as fast as possible you need to get your lines just right, hit the apexes as tight as possible, let the car drift out as far as possible without slipping off the track, judge when to put your wheels onto the low grip infield, and when not to. Basically you want to carry as much speed as possible through the corners, and more importantly, out of the corners and onto the straights.
And this all this is before you even got onto the equally, or even more, crucial details of how to dice and drive in the middle of a pack cars.
